Sodexo is seeking an Executive Chef 4/Director of Culinary for TCU in Fort Worth, TX.  The Director of Culinary will create elegant and sophisticated culinary experiences that exceed culinary and service expectations while enhancing client program objectives for TCU in Fort Worth. Totaling thirteen retail units and one dining hall within the university main campus, along with the sports and leisure; including 9 clubs and 43 suites during the football season.  The Director of Culinary will be responsible for all culinary operations and standards for resident dining, retail, catering and sports and leisure. 


Ideal candidate will possess stellar culinary proficiency, have a passion for quality and the ability to drive outcomes through interdependent working relationships with site specific Sodexo leadership and chefs and managers.  


The selected individual will be responsible for supporting the day-to-day dining services operations and implementing Sodexo standards. This Manager position may serve as the Executive Chef, will offer support to include training new Chefs, and hard-wiring our standard operating procedures. The qualified candidate will have extensive culinary knowledge and a degree in Culinary Arts or similar is desired.  The ideal candidate will have demonstrated experience managing dining services operations, have a valid Serve Safe Certification and prior university food service experience preferred.


You will be responsible for the development and implementation of innovative retail food, resident dining and catering culinary solutions that drive client and consumer satisfaction, client retention, sales, and segment profitability goals. This position leads and participates in project teams to drive innovation, culinary leadership and training to ensure that menus, recipes and tools are cutting edge, drive growth opportunities, are operationally sound, and are built to business segment specifications. 


The successful Senior Director of Culinary will have experience and proven results in, the following areas:


Culinary Creativity: Follows culinary trends and innovates using local sustainable food sources, is able to translate ideas into unique menu and recipe programs that advance the culinary experience across the regional enterprise. Candidate must have the ability to completely translate \u201cauthentic\u201d international cuisine to the customer.


Leadership: Ability to effectively manage and communicate with Culinary Staff, Key Personnel, Management Teams along with a passion and dedication to be \u201cthe best\u201d. Candidate must be highly engaged and extremely hands-on in day to day operations.


Training: Must be able to articulate and demonstrate a wide ranging variety of cooking techniques and skills for the catering staff (plate presentation, quality, safety, proper culinary techniques).


Financial: Ability to manage and demonstrate proven results with food costs, labor and controllable expenses.


The ideal candidate will have:

  • Emphasis on food presentation, quality, execution, menu design & implementation;
  • Focus on customer / patient service excellence
  • Demonstrated experience providing strong leadership, including supervision, direction and training, to a diverse team of employee
  • Focus on food and physical safety and sanitation
  • Experience managing food and labor cost controls to meet targets
  • Understanding of food allergens and special dietary needs


Qualified candidates must have a strong background in culinary operations, systems, process improvement, human resource management, organizational skills, and a strong knowledge in food safety and sanitation are just a few of the qualities that candidates should possess.

Position Summary

Directs daily operations of food production, including menu planning, purchasing, ordering, inventory food preparation, post meal analysis and record keeping. Ensure employees have appropriate equipment, inventory, and resources to perform their jobs and meet goals and deadlines.

Establishes operating standards, implements and maintains Sodexo and branded concepts standards, creates quality improvements and communicates them to employees.

Ensures compliance with all federal, state and local regulations as well as Sodexo/client policies and procedures (e.g. HACCP, quality assurance, safety, operations, personnel, SoSafe and EcoSure).

Trains other chefs/staff on culinary skills through day to day trainings as well the use of Culinary Foundations trainings and standards, and serves as technical expert.

Maintains and develops client relationships and client satisfaction for all aspects of food production to ensure account retention.

Qualifications & Requirements

Basic Education Requirement - Bachelor's Degree or equivalent experience

Basic Management Experience - 5 years

Basic Functional Experience - 3 years
