Sodexo's Aviation Lounge Segment has an exciting opening for the new AMEX Centurion Lounge at Charlotte Douglas International Airport (CLT).  We are seeking a Executive Chef, Airports Lounge, Located in Charlotte, NC.  The lounge is dedicated space for elite passengers to relax, rejuvenate and enjoy chef created dishes from the vast buffet or order from the full-service bar serving premium wine and spirits. We are seeking a dynamic, energetic and experienced Executive Chef to be part of creating memorable dining experiences for our guests.  The Executive Chef will be responsible for insuring excellent front of house guest services for this upscale lounge. We are seeking seasoned hospitality professionals with food service knowledge as well as experience managing salaried staff, Bartenders, alcohol/bar service, Food Attendants and custodial staff.

The successful candidate will:

 

  • execute all culinary programs based on client partner program / brand strategy
  • formulate, write, develop and collaborate on all seasonal menus, including signature and curated program items
  • author ontrend, seasonal, vegetarian, health wellness menus to meet client partner:

-Differentiation expectations

-Variety expectations

-Cost, budget expectations

  • Maintain and enforce all health, hygiene, cleanliness and safety standards
  • Coach, mentor, train and manage all culinary and back-of-house team members
  • Utilize all agreed Sodexo food management & transformation platforms DRIVE, etc.
  • Manage Chef Partner
  • have oversight of daily food operations and deliver a high-quality product;
  • achieve company and client financial targets and goals;
  • develop and maintain client and customer relationships
  • ensure Sodexo standards are met to include compliance with company food and physical safety programs.

  • motivate, coach, mentor and develop manager, frontline (hourly) staff; and/or

Is this opportunity right for you? We are looking for candidates who:

  • 5+ years of experience as a Restaurant Manager or General Manager in a high-end hotel or fine-dining restaurant; aviation/lounge exp is a plus;
  • have experience with premium wines and spirits;
  • have a work history demonstrating strong leadership skills and the ability to work collaboratively with all levels of the organization;
  • possess the ability to manage multiple priorities, demonstrate professional communication skills, and exhibit a passion for a high-level of customer service;
  • exhibit flexibility to take on additional responsibilities as needed; and/or
  • demonstrate working knowledge of automated food inventory, ordering, production and management systems as well as menu graphics programs.

Position Summary

Provides culinary leadership within a large sized unit including menu planning, program execution and staff management & training.  Works directly with internal and external clients managing the catering process from beginning through execution.  Key Duties- Implements & coordinates the culinary function.  - Directs & trains cooks & utility workers.- Ensures food preparation & production meets operational standards.- Manages catering & retail areas.- Customer & Client satisfaction.- Financial management to include food cost & labor management.- Manages food & physical safety programs. 

 

Qualifications & Requirements

Basic Education Requirement - Bachelors Degree or equivalent experience

Basic Management Experience - 3 years
