Unit Description

Sodexo is seeking an experienced Executive Chef 2 for  Carroll College  located in Montanas exciting capital city of Helena. There is RELOCATION assistance for this opportunity!  You are inspired by great ingredients and creative cooking. At Sodexo, we bring these together for culinary innovation.  Our students enjoy various meal plans in a recently renovated student dining hall with three retail outlets, concessions, catering and conference business. Nestled in the Rocky Mountains, our beautiful campus is just a three hour car ride to Glacier and Yellowstone National Parks. Valid Drivers License Required.

 

The Executive Chef will be responsible for the oversight of 23 kitchen staff: mentoring and ensuring compliance to food safety, sanitation and overall workplace safety standards, oversight of food purchasing, the establishment of production and inventory levels, and the management and control of food cost using Sodexo proprietary software.

 

We are seeking Chef candidates with the following in their culinary toolkits:

  • A strong artistic culinary flair can you impress the President of a university?
  • Knowledge of current culinary trends can you compete with food trends and top chefs?
  • Experience with exhibition cooking can you throw down, educate and engage our students?
  • Very high-end taste and a sophisticated palette can you translate that into your food?
  • The ability to inspire a kitchen staff can you help others become trend-setting, innovators?
  • Previous experience in high-end restaurants, corporate accounts or concessions accounts Want to make the jump into Campus Dining?
  • The successful candidate will:

     

    • Be responsible for purchasing, menu compliance, inventory, food cost analysis and food production forecasting
    • Ensure Sodexo Culinary standards including recipe compliance and food quality are implemented
    • Have the ability and willingness to develop and motivate team members to embrace culinary innovations
    • Ensure food safety, sanitation and workplace safety standard compliance
    • Have working knowledge of automated food inventory, ordering, production and management systems

    Position Summary

    Provides culinary leadership within a medium sized unit including menu planning, program execution and staff management & training.  Works directly with internal and external clients managing the catering process from beginning through execution.  Key Duties- Implements & coordinates the culinary function.  - Directs & trains cooks & utility workers.- Ensures food preparation & production meets operational standards.- Manages catering & retail areas.- Customer & Client satisfaction.- Financial management to include food cost & labor management.-  Manages food & physical safety programs.

     

    Qualifications & Requirements

    Basic Education Requirement - Associate's Degree or equivalent experience Basic Management Experience - 2 years Basic Functional Experience - 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.Sodexo is an EEO/AA/Minority/Female/Disability/Veteran employer.
