Unit Description

Sodexo is seeking a Executive Chef 1 for University of Hawai'i at Hilo, located in Hilo, Hawai'i. If you have excellent multi-tasking skills, top rate budget and menu management and a passion for helping to train a great team, we hope you will apply! There is no relocation assistance.  Our successful Executive Chef must be able to engage with culinary team on a daily basis.  Must provide culinary leadership by communication and training.  At times, Executive Chef will participate in community food functions along with catering events that represent Sodexo and the University.  Menu planning with Drive will be key. At times, Executive Chef will work with Housing Director and Housing Assistant along with Resident Assistants for housing programming.

We are looking for candidates who will:

  • Manage the daily food production including production planning and controls
  • Ensure Sodexo Culinary Standards including recipe compliance and food quality
  • Manage food costing, controls and compliance
  • Develop menus and manage inventory
  • Have high expectations for customer service and quality of food
  • Have the ability and willingness to develop and train frontline employees
  • Have a passion for food and innovation
  • Have knowledge of special diets and allergens
  • Knowledge of Sodexo Food Management System (FMS) is preferred

 The ideal candidate has:

  • A strong culinary background, with the demonstrated ability to stay current with new culinary trends
  • Excellent leadership and communication skills with the ability to maintain the highest of standards and implements company policies
  • Previous experience working in a high volume facility
  • Strong management skills
  • Ability to multitask and communicate well with the entire staff

  • Ability to engage and train on a daily basis on basic sausces, food prep cuts, gluten free entree's, vegetarian and vegan dishes

  • Train college student workforce so basic training skills is a must 

  • Culinary production and sometimes menu design - most caterings are scheduled on the weekends

  • Sit down dinners for our Chancellor is also a duty of the Executive Chef

  • Daily/Weekly Inventory, ordering, safety topics, and continuous training is a must.
